Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper for easy removal.
  2. For the crust: In a bowl, mix the graham cracker crumbs or crushed shortbread cookies with melted butter until the mixture resembles wet sand. Press the mixture into the bottom of the prepared pan to form an even layer. Bake for 8-10 minutes or until golden brown. Remove and cool slightly.
  3. For the cheesecake layer: Beat the softened cream cheese until smooth. Add sugar, sour cream, eggs, and vanilla, mixing until combined. Pour the mixture over the cooled crust, smoothing with a spatula. Tap the pan gently to remove air bubbles.
  4. For the pecan topping: In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, and vanilla. Bring to a simmer and cook for 2-3 minutes until smooth. Stir in chopped pecans, coating them evenly in the caramel mixture. Spread the pecan topping over the cheesecake layer.
  5. Bake the bars for 40-45 minutes or until the cheesecake is set and the pecan topping is bubbly. Cool completely before refrigerating for at least 4 hours (overnight is best).
