  • 24 oz. cream cheese (full-fat, room temperature)
  • 1 1/3 cups powdered sugar
  • 1/3 cup sour cream (room temperature)
  • 2 tsp. vanilla extract
  • 1 tsp. fresh lemon juice
  • Pinch of salt
  • For the Berry Sauce (or Cherry Topping):
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 Tbsp. fresh lemon juice
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the crust: Crush the graham crackers into fine crumbs and mix them with sugar, salt, and melted butter. Press the mixture into the bottom of a 9×13-inch pan. Chill for at least 30 minutes to set.
  2. Make the filling: In a mixing bowl, whip the cold heavy cream to soft peaks. In another bowl, beat together the cream cheese and powdered sugar until smooth. Add sour cream, vanilla extract, and lemon juice and mix until combined. Gently fold in the whipped cream until the mixture is light and fluffy.
  3. Spread the cheesecake filling over the chilled crust and smooth it out evenly. Refrigerate for at least 3 hours to allow the filling to set.
  4. Prepare the berry sauce: In a saucepan, combine the berries, sugar, lemon juice, vanilla, and a pinch of salt. Cook over low heat until the berries break down into a syrupy consistency. Cool before adding to the cheesecake bars.
  5. Top the cheesecake bars with the berry sauce or cherry topping, then slice and serve chilled.

Notes
